All the shirred, poached, scrambled, boiled and steamed egg recipes you could possibly want, plus plenty of omelets and sauces. Oddly, there are no custards, and the author regards fried eggs as practically poisonous. Some of the recipes sound interesting, but most seem bland yet over salted. The narrators did a good job.
